Pecan Crusted Tilapia with Honey Glaze

I was searching for frying pan recipes last night and I came across this beauty. It's pecan crusted tilapia with a honey glaze and my mouth is watering just looking at it. It's definitely going on the menu for later this week. I'm also excited about the fact that it only takes 20 minutes to prepare and cook. Sold!

You can find the complete recipe over at Steamy Kitchen.

My First Can of Spam

Mike and I turned into pathetic slackers on Wednesday night. Neither of us wanted to do much of anything after 5pm. Unfortunately, we didn't have leftovers or anything pre-made for dinner so we opened up our pantry and started throwing out options based on the first few things we saw.

The winning combination:

I won this can of Spam
after I lost a trivia game at Christmas.
Have you ever had Spam with mac & cheese? It's super
salty, but delicious.  P.S. Don't read the ingredients until
after you've finished eating.

"You Can Do Anything"

Have you seen this video featuring two brothers who won the Sports Illustrated SportsKids of The Year Award for 2012? The love these two boys show for each other is truly amazing. The doctor who told this family that their youngest son was going to be a burden due to his medical condition couldn't have been more wrong. The value this family places on life and perseverance against all odds is incredible.

You can watch the entire 5-minute video here.

Friday Funny

Have you heard of Sneezy the Penn State campus squirrel? He's apparently so friendly that he lets students dress him up in all sorts of funky hats. When I first read about it, I didn't believe it. Then I found his Facebook page. Crazy!

Enjoy your weekend, everyone!

Vintage Jewelry Bookmarks

Old Things New has this DIY project for taking vintage jewelry and giving it new life in the form of a beautiful bookmark. With all the cool tech gadgets available for reading these days, do people still use bookmarks? I do! I can't help it. I just love the feel of a real book!

I'm excited about this project because I have some old costume jewelry that was passed down to me from my grandmother when she passed away a few years ago. Unfortunately, it's not my style so I haven't found a good use for any of it. Maybe this will do the trick?

Lately...

Remember all those unfinished projects I mentioned I'd be tackling as a result of unemployment? One of those projects was painting some of the rooms in our house that either need a fresh coat of paint or a completely new color. I started with our living room and worked my way into our dining room (pictured below). I'll be moving on to our hallway next. I'm thinking something along the lines of seafoam green there, but I haven't decided yet. Painting is a lot of work, but I'm having a blast!

Candy Cakes

January is a busy month for birthdays in our family and with our oven out of service at the moment, baking cakes isn't an option for creating celebratory sweets.  I got to thinking about alternative solutions and somewhere in my Internet searching, I came across Sweet Servings.  She created a candy cake, you guys! Maybe this kind of thing has been around for a while, but it's news to me. What a neat idea!

The one that Cindy from Sweet Servings created.
Doesn't this candy cake look like fun? I love the addition of noisemakers.

Happy New Year!

Happy 2013 everyone!

We'll be staying home and doing what we usually do on New Year's Day: building puzzles in our pajamas and sharing snacks and cocktails. This year, this ginger champagne cocktail from Martha Stewart is on our to-do list. Doesn't it sound delicious?  How will you be celebrating the first day of the new year?

Ginger Sparkler

2 teaspoons of peeled, finely grated ginger
1/2 cup sugar
1/4 cup of water
1 bottle of Prosecco or Champagne

In a small saucepan, boil the ginger, sugar and 1/4 cup of water until syrupy (or for 2 minutes). Pour contents through a sieve over a small bowl. Discard solids.

Pour 1 tablespoon of syrup into a glass and fill with champagne. Gently stir then serve. Cheers!
